Our Qualified Food Process Authorities

Our scientific staff help companies certify that their food processes meet FDA standards. We are recognized nationwide as established, qualified experts in thermal and non-thermal processing of food products. We have more than 50 years of experience in designing and implementing scheduled processes for food. Our company can help you satisfy the requirements of Part 113.83 of 21 CFR.

Process authority: A FDA Definition

"...the person(s) or organization(s) having expert knowledge of thermal processing requirements for foods in hermetically sealed containers, having access to facilities for making such determinations, and designated by the establishment to perform certain functions as indicated in this subpart.." Why You Need a Food Processing Authority

To qualify as a process authority, the FDA requires that the individual or group must have the expert knowledge that comes from developing processes and evaluating process deviations on a regular basis.

Food Safety and Process Technology has more than 50 years of experience in food safety technology as food scientists and processing experts.

We establish processes, evaluate processing deviations and keep required records of the work done in these areas. We make no assumptions about who is taking action and assume whatever responsibilities are required even if they are not delineated in the regulations. For example, in California we work closely with Technical Expert Review Panel (TERP) named by the Almond Board of California to validate processes in that food industry.

Process Authority Services We Offer

FS PT is available to consult on possible new technologies for log reduction of E. coli or other pathogens. We offer the following services:

  • FDA Low Acid Canned Foods (21 CFR Part 113) and acidified product compliance (21CFR Part 114) and validation.
  • Representation of processors and importers with FDA.
  • Temperature distribution and heat penetration studies.
  • Thermal process determination, evaluation and filing.

  • Ethylene oxide, gamma irradiation, and hydrogen peroxide sterilization/validation.
